Right, I'm on the verge of starting one of my Baneblade kits (this one from 2008!), so a simple question.
Is it easier to fully clean up and build the thing before painting or to clean up and undercoat the thing in sub-assemblies?

I would clean it up all in indervidual components. But build it in sections. Main body. Sponsons. Turret etc

Yup.
Clean everything when it's in component form. Some of the sprue cut off and mould lines you just can't get to when it's assembled.
Then build main body, turrets, sponsors as separate sub assemblies and paint them before sticking them on.
If you're feeling adventurous you could always magnetise the sponsors ;-)

If you are going to magnetise the sponsosns i would do the weapons and sponson mounts. As well as some of the armour plates as you can remove the sponsons in game for a cheaper points cost

This won't be used in game, it's just a model/weathering project for me. It'd be an illegal weapon fit anyway - turret Vulcan megabolter, hull t/l lascannon and a demo. cannon, sponsons with T/L heavy bolter and Inferno cannon in each...

Yep, that's exactly the one. Got a bunch of Machinator's parts to do it too - mine will be a little 'cleaner' than his though - Astartes vehicles are never as heavy on the rivits and bolts as the IG and pre-Heresy woud have been even less so.

That aside, when I assembled my Baneblade I sprayed on the black basecoat while everything was on sprue, cut it off and cleaned the mold lines, assembled it (albeit with removable sponsons only stuck on as they slot in nicely and gravity keeps them in place) and then painted it. As I recall that worked fine since the model doesn't really have hard to reach areas you want to paint before assembly (maybe the space behind the oil drums, but it worked for me, so it won't be mandatory). The only thing that you need to be aware of is the weapon mounts that have movable parts. I left them black, and the spray coat does not wear away. If you want them any other color, this may be what you want to paint (and possibly varnish) before assembly.
